Halibut in Red Coconut Curry Sauce

After making the red curry paste, I wanted to experiment with a new dish…here is the recipe:

2/3 cup coconut cream (about half a can – you can freeze other half)
3 tbsp red curry paste
4-6 kaffir lime leaves (bruised)
4 tbsp fish sauce
3 tbsp palm sugar
1 can coconut milk
2 filets of halibut (or sea bass, snapper, etc.) – cut in several pieces
thinly sliced orange bell pepper
6 pieces baby corn (sliced lengthwise)
bamboo shoots (julienned)
2-3 bird’s eye chili peppers
chopped fresh coriander for garnish

Heat the coconut cream on high heat in the wok. To “crack” the coconut cream, essentially reduce so that water has steamed out and oil separates. Add the curry paste; cook for several minutes in cracked cream until fragrant. Add fish sauce, palm sugar, and lime leaves; stir well. Slowly add coconut milk. Bring to a boil. Add chilis (chop for more intense heat, or slice lengthwise & de-seed). Add pieces of fish and slices of bell pepper; push down until covered and allow to cook for several minutes. When fish is flaking, add corn and bamboo shoots; stir. Serve over jasmine rice. Delicious!
